A beginner-friendly recipe for Chicken Marsala that teaches you how to create a delicious restaurant-quality sauce at home.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1/2 cup olive oil
  • 8 oz. cremini mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken and set aside.
  3. In the same skillet, add the sliced mushrooms and sauté until they are browned and tender, about 5 minutes.
  4. Pour in the Marsala wine and scrape the bottom of the skillet to deglaze, allowing the wine to reduce for about 2-3 minutes.
  5. Add the chicken broth and bring to a simmer. Return the chicken to the skillet and cook for an additional 10 minutes, or until the chicken is cooked through.
  6. Stir in the butter until melted and the sauce is glossy. Adjust seasoning with salt and pepper if needed.
  7. Serve the chicken with the sauce spooned over the top and garnish with fresh parsley.

Notes

  • For a thicker sauce, you can let it simmer longer to reduce further.
  • Serve with pasta or mashed potatoes for a complete meal.
  • Feel free to add garlic or shallots for extra flavor.
