Ingredients
Scale
1 medium butternut squash, peeled and cubed
1 cup fresh cranberries
1/2 cup brown sugar
1/4 cup orange juice
2 tablespoons olive oil
1 teaspoon cinnamon
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the cubed butternut squash with olive oil, cinnamon, salt, and pepper.
Spread the squash on a baking sheet and roast for 25-30 minutes, or until tender.
In a saucepan, combine cranberries, brown sugar, and orange juice. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes.
Once the squash is done, drizzle the cranberry glaze over the roasted squash and toss to combine.
