  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Set the Instant Pot to ‘Sauté’ mode and add olive oil.
  3. Brown the roast on all sides, about 4-5 minutes per side.
  4. Remove the roast and set aside.
  5. Add chopped onion and garlic to the pot, sauté until softened.
  6. Return the roast to the pot and add carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary.
  7. Close the lid and set the Instant Pot to ‘Manual’ for 60 minutes.
  8. Once cooking is complete, allow for a natural release for 10-15 minutes before quick releasing the remaining pressure.
  9. Remove the roast and vegetables, and let the roast rest before slicing.
  10. Serve with the cooking liquid as gravy.

Notes

  • For a thicker gravy, you can mix cornstarch with water and add it to the cooking liquid after removing the roast.
  • Feel free to add other vegetables like celery or parsnips.
  • This recipe can be made ahead and reheated for leftovers.
