Ingredients
Scale
2 cups all-purpose flour
1/2 cup pumpkin puree
1/4 cup sugar
1/4 cup milk
1/4 cup butter, melted
1 egg
1 packet (2 1/4 tsp) active dry yeast
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2 cup brown sugar
1/4 cup chopped pecans (optional)
Instructions
In a bowl, combine warm milk and yeast; let it sit for 5 minutes.
In a large mixing bowl, combine flour, sugar, cinnamon, nutmeg, and salt.
Add pumpkin puree, melted butter, egg, and the yeast mixture to the dry ingredients; mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth.
Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Roll out the dough into a rectangle, spread with softened butter, and sprinkle with brown sugar and pecans.
Roll the dough tightly and cut into rolls.
Place rolls in a greased baking dish, cover, and refrigerate overnight.
The next morning, preheat the oven to 350°F (175°C) and bake for 25-30 minutes.
Let cool slightly before serving.
Notes
For a sweeter roll, add a cream cheese frosting on top.
These rolls can be frozen before baking; just thaw and bake when ready.
Make sure the milk is warm, not hot, to activate the yeast properly.
