Ingredients

Scale
  • 1 whole chicken (about 4–5 lbs)
  • 8 cups of water
  • 2 medium onions, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup of egg noodles (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, place the whole chicken and cover it with 8 cups of water.
  2. Bring the water to a boil, then reduce the heat and simmer for about 1 hour.
  3. Remove the chicken from the pot and let it cool. Skim off any foam or fat from the surface of the broth.
  4. Add the chopped onions, carrots, celery, garlic, bay leaves, thyme, salt, and pepper to the broth.
  5. Shred the chicken meat and return it to the pot.
  6. Simmer the soup for an additional 30 minutes.
  7. If using, add the egg noodles and cook until tender.
  8. Remove bay leaves and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a richer flavor, you can roast the chicken before adding it to the pot.
  • Feel free to add other vegetables like peas or corn for extra nutrition.
